Grilled Fiesta Lime Chicken (Low Carb) is an easy marinated chicken recipe with a creamy tangy sauce that everyone loves.

How to Make Fiesta Lime Chicken on the Grill

One of our very favorite low carb slow cooker recipes is Crock Pot Fiesta Lime Chicken, a main dish we converted from yummy oven dish we found in one of our favorite low carb cookbooks, Keto Restaurant Favorites. The sauce on this chicken is absolutely incredible and we make it a LOT around here. So the other day, I decided to throw it on the grill instead of the slow cooker and we loved the results!

Ingredients
Marinade- 1 hr to Overnight Before Cooking
- 3 lbs boneless, skinless chicken we used thighs
- 1 cup chicken broth
- 1/3 cup soy sauce
- 3 tablespoon sugar substitute
- 3 cloves minced garlic
- 1 teaspoon liquid smoke
- salt to taste
- 1 zest of a lime (optional)
- 4 limes juiced
- 1/4 teaspoon powdered ginger
Dressing- After Cooking
- 1 cup mayo
- 1 cup sour cream
- 1/2 cup salsa
- 1/4 cup chicken broth
- cajun seasoning to taste (1-3 teaspoon)
- 1 teaspoon cumin
- 1 teaspoon dried parsley
- hot sauce to taste (1+ teaspoon)
- 1 cup shredded cheese of choice
- Garnish- Limes cut into wedges
Instructions
Marinade (To make at least an hour before cooking or even the night before.)
Place the chicken in a container that can be air tight.
In a bowl, combine all of the marinade ingredients and pour over top of chicken.
Seal container and shake well to coat chicken entirely.
Marinate in the fridge for at least and hour or up to overnight before slow cooking.
Cooking the Chicken After Marinading
Preheat grill on medium high
Drain the chicken and grill 7 minutes on each side or until the chicken reaches an internal temperature of 170.
Place chicken in casserole dish.
Adding Dressing After Cooking
Mix together dressing ingredients except cheese and pour over top of chicken.
Top with cheese and serve or, if desired, broil until cheese melts and sauce is heated through.
Serve with lime wedges to squeeze over portions before eating.

Hi Cris! What would you recommend having with this? We’re doing low carb, but I don’t want to keep using cauliflower rice (I’m about cauliflower riced out!). Thank you! And thanks for the amazing recipe!! ❤️

Hi Chelle!
Right under the recipe in the post are 3 recipes we recommend serving it with. I like it on its own, Mikey likes it in a low carb tortilla. But if you are wanting some sides, the guac, avocado salad and the broccoli all go nicely with it.
