There's perhaps no meat on a stick more famous than the gyro. A Chicago favorite, you can find the meat roasting on a spit at nearly every Greek and Mediterranean restaurant in town. Some places still serve homemade gyros while others offer different variations such as chicken gyros. It’s not a Greek restaurant nor is it the typical gyro, but Publican Quality Meats’ take on the sandwich is just as good if not better. The “Return of the Gyro” is a delicious combination of braised pork belly instead of beef or lamb, raita (in place of tzatziki), escalivada, pea shoots and Calabrian chili vinaigrette on griddled flatbread. One bite and you’ll wish other gyros could be this good.

Decades later, the old-school Skokie restaurant is still one of the best spots to go for a gyro. And as you might expect, they’re as juicy as they come served on fluffy pita bread.
